  OBSERVED A BUILDUP OF RESIDUE ON HANDLE OF WARMER AND IN DOOR OPENING OF WARMER LOCATED IN THE
  FRONT OF THE STORE. CLEAN ALL EQUIPMENT AS OFTEN AS NECESSARY TO MAINTAIN CLEAN. OVERALL
  CLEANING OF EQUIPMENT WAS IMPROVED FROM THE PREVIOUS INSPECTION.
   
  3717-1-04.5 Equipment, Utensils, and Linens:  Cleaning of Equipment and Utensils
   
  (A)      Equipment, food-contact surfaces, nonfood-contact surfaces, and utensils.
   
       (1)      Equipment food-contact surfaces and utensils shall be clean to sight and touch.
   
        (2) The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and
       other soil accumulations.
   
        (3) Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and
       other debris.

  OBSERVED A HOLE IN WALL NEAR HANDWASH SINK. REPAIR HOLE IN WALL SO THAT THE WALL IS SMOOTH, NON
  ABSORBENT AND EASILY CLEANABLE AND MAINTAIN IN GOOD REPAIR. THE PERSON IN CHARGE STATED THAT HE
  HAD A PIECE OF WOOD TO COVER THE HOLE BUT HAS TO PAINT IT YET.
   
  3717-1-06.4 Physical Facilities:  Maintenance and Operation
   
  (A)      Repairing.
   
       The physical facilities shall be maintained in good repair.

  CLEANING OF FLOORS AND WALLS WAS IMPROVED. PERSON IN CHARGE STATED THAT HE IS IN THE PROCESS OF
  REPAINTING CEILING WHERE STAINED.
   
  ALSO, WOOD SHELVES IN FRONT OF THE FACILITY AND ABOVE THREE COMPARTMENT SINK WILL BE PAINTED /
  SEALED WITH A POLYURETHANE SEALANT.
   
  CLEANING UNDER AND BEHIND EQUIPMENT WAS IMPROVED. HOWEVER, TILES UNDER FRYERS WERE STILL
  STAINED A DARK BLACK. IF THESE TILES CANNOT BE CLEANED THEY WILL NEED TO BE REPLACED.
   
  *THIS INSPECTION IS A FOLLOW UP TO THE PREVIOUS INSPECTION. ALL PREVIOUSLY CITED VIOLATIONS
  HAVE BEEN CORRECTED EXCEPT FOR THE ABOVE CITED VIOLATIONS. A FOLLOW UP OF THE ABOVE CITED
  VIOLATIONS WLL BE CONDUCTED DURING THE NEXT REGULAR INSPECTION.*
   
  OVERALL GOOD IMPROVEMENTS WERE MADE.
